• Which little detail in the hotel, that hardly anyone notices, makes a difference for you?

 “What our guests don't notice as much are the visible foundation stones that were used to build the hotel in 1833. The building was originally a farm but has since become a hotel.”

• Which moment in winter that feels like a new beginning to you?

“For me, the new beginning is in January, when pruning takes place. That's the first step for a good wine. The vines are pruned during this period and it's then that the quality first appears.”
