The story of indulgence began with Maximilian Plant, a student at Kaiserhof, the local hotel management school. He discovered the original recipe for Marling wine chocolates during his A-level project. He knew how to wrap the excellent Merlot, which grows in the area, in the finest chocolate and turn it into a sweet temptation. Klaus Pircher from the Vinum Hotel Paradies then took the chocolates and refined them by enriching them with other delicious fillings such as passito and grappa.

Method
Chop the chocolate, melt with the glucose in a bain-marie, add the Merlot and stir. Leave the mixture to rest for a short time until it becomes creamy. Pour into the hollow moulds, seal and leave to set. Dip the pralines in the remaining melted chocolate, roll on a wire rack, leave to cool and enjoy!
