  • Which kind of wine comes to mind in spring?

"It's already quite warm here, everything is sprouting and I'm in the mood for a lovely, cool Pinot Blanc, preferably one from the Großkemat Winery. These vines grow in Prissian, almost visible from here. This wine is a delight - deep, elegant and great fun to drink."

  • What do you like best about spring at Burgstall?

"Burgstall is situated on a sunny slope and is therefore particularly well-served by the sun. For those who don't know where we are, Burgstall lies directly across from Lana, and very near Merano, only 5 kilometres away. In spring it can reach 25 degrees, or even more by the end of March so guests can well and truly soak up the sun on the terrace - Burgstall can definitely buy you over  with its sunshine in the spring."

  • What's the most unusual dish you've ever served in your hotel?

"Patrick is actually known for his simple yet meticulous cooking. But last year he cooked a saddle of venison with hay yeast and buttermilk. It was very unusual and at first, I couldn't imagine what it would taste like - but it was amazing! Just like all his dishes."
