• Which wine would you choose to best compliment a cold winter’s evening?

“During the winter, my favourite wine is Riesling Spätlese, a late harvest white from Taschlerhof Winery in Brixen. In the cold season, a glass of this wonderful wine reminds me of a cellar filled to the brim with ripe fruit, apricots, apples and caramel. Simply heavenly!”

• What is your secret ingredient for the perfect winter dish?

“For me, it's definitely the apple. Not only does it provide us with the sweetness we need on cold winter days, but it also enhances many a main course. It is an ideal accompaniment to braised meat, especially lamb, or potato goulash. South Tyrolean apples are also delicious served with Savoy cabbage or in potato pasta parcels filled with apple and bacon.”

• What is the hidden gem in your hotel that only the most observant of guests discover?

“It's our new wine cellar, where we store the best white wines of the Isarco Valley. In the large display window, our guests can admire the many bottles from the outside and choose the right wine for their dinner.”
